My daughter wants me to write a book for her generation. She says her friends don’t know the tips and tricks that make life easier. For now, I’ll share here and maybe one day she’ll write that book because she’s a more eloquent writer than me.
On Saturday morning I decided to treat myself to Whole Wheat Banana Pancakes. This recipe is a favorite in our home and we used to make them when we lived together. Standing in the kitchen, side by side chatting while pulling together every ingredient for a sit down brunch is one of life’s most meaningful moments in my mind.
I decided to find the waffle iron and make waffles instead of pancakes, because the batter can be used for either. It was in the back of a bottom cabinet, so I wiped it off really well from not being used and plugged it in to heat while making the batter. This is one recipe I really enjoy the taste of whole wheat flour, so don’t be leery of using it.
The trick while making pancakes and waffles is keeping them warm between pours. I set my oven to bake at the lowest temperature possible which is 170°F and yours may go lower which is fine, but I wouldn’t set it below 120°F because the goal is to keep them hot.
Find something you already use in the oven such as a baking sheet, or oven proof plate and sit it nearby. Once a waffle, or pancake is ready, place it on the plate and pop it in the oven. Have an oven mitt, or pot holder ready and remember to use it every time you retrieve the plate from the oven because it will be piping hot! Yes, most of my tips and tricks have a slight edge of danger to them.
Once your cooking is complete, turn everything off and you can let the plate cool to the touch before placing it on the table, or sit it on a trivet. Warn everyone at the table to not touch the hot plate and see how well they listen. 😊
This recipe is easy to cut each ingredient in half to make a smaller batch and I substitute oat milk for the regular milk. By halfling it, you will produce 3 good sized waffles, but they freeze well. My daughter taught me a trick to wrap the leftovers in plastic wrap in the serving size I’ll eat before popping them in the freezer. So, I wrap one waffle, or 2 pancakes in plastic wrap and place them in a zip-lock freezer bag labeled with the date and contents. I hope this is helpful. 💖
